WHere is a home-style version of a drink featured on the seasonal cocktail list. Designed as a party-sized pre-mixed that is bursting with the flavours of a festive period, rendering it excellent for hosting a festive gathering. Reserve the remaining citrus syrup for brunch beverages, puddings, or to make another batch of the drink.
The Bikini Cocktail
Serves 10 people
For the Citrus Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Cocktail (yields 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Instructions
For the Cordial: Place every components into a saucepan, bring to a simmer, stirring until the sugar dissolves. Next, take off the heat allowing it to reach room temperature completely. Pour into a sterilised bottle, seal keeping it in the refrigerator, it will last for up to one month.
Preparing the Premix: Combine every liquids into one sizeable container, let it rest for one hour, then filter it preferably using a fine cloth, so it's completely strained.
To serve: Pour 85ml of the premix into a mixing glass packed with ice, and agitate lightly for about 60 seconds until cold. Pour into an chilled martini glass or similar, decorate with some cranberries and complete it with a light spray with the mandarin essence above the glass.
